Philosophy

Our Dream ~ The Zilkha brothers realised their dream, creating a restaurant together in 2013. Tomer is the Chef and creative half of the duo whilst Itay, an accountant based in London is the business half. Tomer Zilkha studied and trained to be a pastry chef in New York and Alsace, France. In addition to his role at PF Tomer is a Professor at Bergen Community College in Paramus, New Jersey, where he teaches at the Hospitality Management Department of Culinary and Pastry Arts.

Our Philosophy ~ Pâtisserie Florentine aims to bring some of the feeling & flavors of France to northern New Jersey. We would like for you to feel at home when you visit, & we have endeavoured to create an inviting bistro atmosphere, both rustic & contemporary, that is comfortable & convivial. Chef Tomer Zilkha offers approachable, French-inspired fare made from the rich selection of fresh produce & artisanal items produced in the Garden State. Pâtisserie Florentine brings together a passionate & talented family of professional chefs & experienced bakers as well as carefully trained baristas and waitstaff. All members of our team emphasize excellence, care, & sincere hospitality - important ingredients in our recipe for making our guests feel at home. A big hug to the environment ~ Our team strives to minimize our environmental footprint. To that end, we have instituted conscientious work protocols & advanced technology, designed to save both water & energy. In the design & outfitting of our space we have used reclaimed wood for our floors, reclaimed marble, low-wattage LED lights, & a variety of other recycled materials. Another cornerstone of our eco-efforts is our commitment to working with service providers who are also environmentally conscious.

Community Matters ~Pâtisserie Florentine is a warm & inviting retreat where friends & family can relax over coffee, breakfast, brunch, & lunch. In addition, we will be organizing fun community events in our unique space & invite you to host your own event or celebration here.

We are active in supporting local charities, look out for past and future charity events on our facebook page. And not all of the artistry is happening in our kitchen: we support local artists. Selected artists can exhibit their work here - our walls are their gallery! At Pâtisserie Florentine we believe that giving back to the community is a small, but important way in which we can demonstrate our gratitude for your support! We look forward to developing a unique & healthy relationship with both our guests & the local community.
